The extensive renovation and rehab of the
Simon Pearce Restaurant provided a broad range or challenges
and demanded extensive pre-construction planning coupled with
exacting execution on an extremely tight timeline. Since this
project entailed closing a working restaurant for the shortest
possible time, Estes & Gallup entered the project very early
to work as a team with the engineer, architect, and owner to
fit all work within a six week period. Every day that the restaurant
was closed, Simon Pearce was losing money, as they had made
the commitment to pay and retain their staff during the hiatus
in operation. Estes & Gallup took care of the permitting
process which was particular extensive as the structure is part
of the Vermont historical register. When the restaurant closed
everything was staged and ready to go. Then after gutting key
portions of the building Estes & Gallup constructed a new
prep kitchen, an internal stairwell, a three-floor dumb waiter,
and banquet kitchen. To complete the job Estes & Gallup
completely renovated the main kitchen.
